belated happy easter

How good are long weekends!! Ā Even better, how great is it to spend it with family. Ā These past few weeks have been huge for me but its reminded me of one thing;
How completely grateful I am for the precious gift of family!
That we can sit, on a long weekend, enjoying each others company and thanking God for the wonderful gift He has given us through His son. Ā That we can give thanks for the sacrifice He made for us, so that we can live and enjoy time withĀ our families freely!
Part of what comes with enjoying that family and faith for us and many over Easter is FOOD glorious food.
This recipe is fast becoming one of my favourites and one my mum receivedĀ from her mum. Ā Nice and chocolatey just for easter!

Chocolate  Date Torte

DATE AND CHOCOLATE TORTE

This torte is best served the day it is made.Ā  Recipe unsuitable to freeze or microwave.

  • Ā 3 egg whites
  • Ā½ cup castor sugar
  • 1 cup slivered almonds
  • Ā¾ cup finely chopped dates
  • 125g dark chocolate, grated
  • 300 ml carton thickened cream

Grease a 23cm spring-form pan, line base and side with foil, grease foil.

Beat egg whites in small bowl with electric mixer until soft peaks form, gradually add sugar, beating until dissolved between each addition.Ā  Chop almonds finely, fold through egg mixture.Ā  Fold in dates and chocolate.

Spread mixture into prepared pan, bake in moderately slow oven about 40 minutes.Ā  Cool in pan.

Place torte on serving plate, carefully remove foil, cover torte with whipped cream, decorate with extra grated chocolate and extra slivered almonds, if desired.

Refrigerate several hours before serving.

Try something new with the same recipe –Ā substitutingĀ dried dates for dried figs andĀ macadamiasĀ insteadĀ ofĀ almonds!
